Pork Chops with Bourbon Mushrooms

Simply Recipes had a gorgous recipe for Simply Pork Chops with Mushrooms Bourbon Cream Sauce which can be slimmed down without losing the strong flavors or elegance.

Pork Chops with Boubon Mushrooms

2 Tbsp olive oil
1 lb button mushrooms, sliced
1/4 cup chopped onions
2 large garlic cloves, chopped
1/2 cup dry white wine
1 cup chicken stock
1/4 cup bourbon whisky (*Complete shit boubon works fine)
Salt and pepper

4 6-7 oz center-cut pork chops

To prepare the sauce, sauté onions, garlic, and mushrooms in 2 Tbsp of olive oil in a large skillet on medium high heat until the mushrooms are browned - about 15 minutes. Add the wine and boil down until the liquid is reduced to almost a glaze, about 4 minutes. Add the chicken stock and bourbon. Simmer until the sauce thickens.

Prepare the pork chops however you like. We did it by rubbing them down with olive oil and salt, placing sliced garlic on top, and broiling until they were making popping noises. Spoon the mushrooms in their syrup over the chops. We ate this with rice and green beans, and it was a really good looking plate.



This was a real winner, and I'd serve it to guests.
